Saffron grown in Demonte represents a tasty novelty among the downstream products and, although it is not a native crop of the Stura Valley, it is quickly managing to carve out increasingly significant market spaces, both among private buyers and at restaurants in the area and beyond.
Despite the environment traditionally favorable to the cultivation of this spice among the most precious in the world is the Mediterranean area, the microclimate of the Stura Valley has nevertheless allowed the development of this crop whose product is marketed in bulbs, powder, stigmas or, even, used in the manufacture of other products such as butter or honey.
